Here from France: a terrific tool for dividing the whites and yolks of eggs into separate batches.
Made of a slotted platform joined to a clip (seen in lower right of
picture), this gadget hooks on the edge of a quarter-size steam-table pan.
(The clip as shown in the picture above is cut off; the actual clip is bent
toward the adjoining strip of metal to keep its hold on the pan.)
Function is simple: Clipped to a quarter-size pan on the right, this
gadget leans into a pan on the left. When the whole egg is dropped on the
v-shaped platform, the egg white drips through the slots and collects in the
right pan, the egg yolk sliding into the left pan.
A valuable time saver—at a rate of 12 to 17 eggs a minute, you'll have
about a thousand eggs in an hour, and rinse off this tool in 30 seconds.
