Made of high impact Makrolon injection molded plastic, the Holey Baffle increases bowl capacity from 10 to roughly 17.5 lbs for both the X3210 and Delta units, with no compromise to the tempering process. Along with capacity increase, ChocoVision’s Holey Baffle provides performance improvements due to more direct heat reaching the pool of chocolate at all times. Strategically placed grooves in the baffle allow the chocolate to flow on both sides of the bowl, while still providing enough agitation and temperature control to give you perfectly tempered chocolate.
