Concerns were not justified I have a lot of experience with tart pans but have never purchased them myself. I was recommended these and thought I would try them and see how they work out. Wasn't sure about using tinned steel but it hasn't been too stressful to watch out for moisture. Plan to get plenty of use out of mine.
