    Legend has it that the luscious dessert known as a charlotte originated in 18th-century Britain and took its name from Queen Charlotte, wife of King George III and a patron of the country’s apple growers. Recipes called for spiced apples baked in a mold lined with thin slices of buttered bread. In the early 19th century, chef Antonin Carême created the charlotte Russe, a chilled version of the dessert made with Bavarian cream nestled in a ladyfinger shell. Today, you can prepare both hot and cold charlottes in this traditional mold. Its tinned-steel construction encourages uniform baking or chilling, while flared sides simplify unmolding the finished desserts. The traditional heart-shaped handles simplify maneuvering the filled mold, while adding a touch of romance to this historic dessert. 2-qt. cap.; 7" diam., 4" high.

Great for charlottes, good for custards These are good quality, decent heft, handles generous enough to easily grab. Replacements for a mold ruined by yet another Crappy Martha Stewart recipe (begone Satan!). These don't ho on the stove - and I discovered this in the use instructions AFTER they arrived. I was specifically shopping for something that could go stovetop to oven - stars subtracted because I don't appreciate the "surprise" I made cr?me caramel by starting the sugar caramel in a pan on the stove, caramelizing in the oven using the mold. A bit cumbersome. Worked fine for apple charlottes though.

Perfect Although I have not yet used the mold, it is exactly what I was looking for and I am looking forward to a terrific rum charlotte for Christmas.
