    Measured at the top, this pan is 4-3/4 inch wide x 15-3/4 inch long x 4-5/8 inch high (120mm wide x 400mm long x 117mm high). Pullman pan made of black-coated steel known as "blue steel." Sliding on the lid should take no effort. If you meet with resistance, slide on the lid from the other side of the pan.

Unfit for commercial use. I bought two of these and put them immediately into production. The "blue steel" is of very low quality and I would not buy another. These pans rust easily and must be seasoned with oil after each use to prevent corrosion. Even if meticulously washed and oiled, they still leave a noticeable discoloration on the bread. I must use them for now, but for the price, I expected much better quality. They have no brand name on them, and they are quite cheaply made. Anyone with access to a sheet metal shop could do just as well. I will be discarding them as scrap metal as soon as I can afford a Matfer Exopan.

Fingerprints Very happy with my new steel Pullman-loaf pan, but was disappointed that the outside was stained with finger prints and such. Inside of pan was clean, though. Finger prints were stained and I couldn't remove with soap and water. Going to try a metal cleaner. Stains won't hurt it's bake performance, though. Glad of that.
