Kevlar® Material—the part of this mitt that's colored yellow—is outstanding for the toughest jobs. It offers the best protection in high-temperature and high-risk environments like breaking down broilers. Kevlar is best used in temperatures between 600F and 900F. Kevlar is applied in critical areas of  “Plus Series” products (like this one) for added protection and durability.

Nomex® Material—the part of this mitt that's colored blue—offers superior protection where there is a risk of exposure to open flame. Nomex is best used in temperatures between 400F and 600F. Nomex® puppet oven mitt is excellent for pizza ovens and other high-temp applications.
