26cm pan is 19cm on flat part and 2 inch high. 30cm pan is 21-1/2cm on flat part and 2 inch high. 36cm pan is 2-1/4 inch high. 39-1/2cm pan is 30cm on flat part and 2-3/8 inch high.
This extra-thick professional frying pan has two firmly welded handles. It has many different uses and proves ideal for paella because of its flared shape, letting liquid boil down and evaporate fast. Its heavy-gauge thickness allows food to simmer.

Like the old smooth cast iron
Old cast iron is legendary - impossibly smooth and responsive. New cast iron (from Lodge and such) has a rough finish, thick wall, and a completely different heat response.
De Buyer thick carbon steel (not the super-thin stuff) is the closest I've found to the responsiveness and finish of the old cast iron. Once seasoned, it's awesomely non-stick. (Just let it get fully hot before putting the food in - good things come to those who wait).
