Pavoni's Pavogel is made for ice cream on a stick.
The stick is inserted (beneath the ice cream cavities) in a slot whose compartment (part of the mold) is hinged. The two parts of that compartment are held together by nubs and matching holes.
The hinge allows you to open the slotted compartment and lift the ice cream out by the stick, so the food and your fingers don't make contact. That means easy, fast and clean removal of ice cream from the mold.
Using the Pavogel mold
- With a pastry bag or funnel, fill the Pavogel cavities.
- Insert each stick in its slot.
- Even out the ice cream with a spatula.
- Put in blast chiller for 90 minutes.
- Open the hinge and lift the ice cream out by the stick.
Volume each cavity 3.0 oz (90ml).
Overall size of mold 5-5/8 inch x 7-5/8 inch x 1 inch high (143mm x 194mm x 25mm high).
Each wooden stick 3/8 inch x 4-3/8 inch (10mm x 111mm).
