Pie weights or pie chains will keep your pie crust securely in shape as it bakes, while cake testers will let you know when your cake is perfectly baked and ready to eat. Use a pie crust shield to keep your pie's crust scrumptiously golden, but never over-browned or burned. A bread lame or baker's blade will take care of creating the characteristic slashes on the top of your artisan bread loaves. To create a cupcake with a delectable surprise filling of icing or custard, one of our cupcake corers will put a perfect hole in its center. Cake release will take care of keeping your pastries from sticking to the pan. Sometimes it can be hard to get that perfect shape, which is why we have heating cores: a cylinder of a few inches set inside a cake as it bakes. Another way to ensure even baking are cake strips or bake even strips, which, for good reason, are also called magic strips. They apply an insulating layer around the inside of a cake pan, so that the edges won't bake more quickly than the center and cause it to cave in. Speaking of evening things out, don't forget to grab a tart tamper when creating a tart shell pastry; as the name indicates, it will tamp down the dough to keep it level and smooth.
