we would recommend you should watch some youtube videos for better understand how to play around with it.
Best recommended practice is using it with a rolling pin made for fondant and also to work on a flat surface.

We've not verified this with the company yet but as far as we know it is Gluten Free, Dairy Free and Nut Free.
