    The Revolation Delta is a state-of-the-art chocolate tempering machine, melting and tempering 3 to 10 pounds of pure chocolate in approximately 1 hour. It maintains perfect temper conditions for hours and hours, and like all of ChocoVision's machinery, is equipped with a removable, dishwasher safe bowl, baffle and a set of three scrapers. The Rev Delta will be ideal for chocolate makers, whether in their home kitchen or a sophisticated laboratory environment.

    The Chocovision Delta has the same assets as the X3210--the same dimensional footprint, almost all of the same components, and the same capacity to melt and temper chocolate--and more:
    • Manual mode: Allows non-cocoa-butter-based chocolates (compound) to be melted and maintained at a specific temperature without going through the tempering process.
    • Recipe storage: Stores up to 26 different chocolate recipes (melt, temper and delta points). This is for producing multiple varieties of chocolates whose characteristics do not conform to the Delta's default settings.
    • Extended temper mode: Allows the chocolate to stay in perfect temper for 18 to 24 hours--compared with the  X3210, which keeps the temper for only 1 to 1.5 hours.
    • Machine timer/delayed start: Begin melt cycle up to 72 hours from the time of setting for chocolate to melt at specified time.

So easy to use!! This Revolation Delta machine is by far the best machine to have if you are making chocolates. This machine capacity lets you make 3-10lbs of chocolate at one time and if you have the holey baffle it is even higher capacity. This is a great machine because it is basically a set it and let it go machine and you can get prepping done while the machine is doing all the work for you. This machine also has the extended temper cycle which is really great because you can take your time using the chocolate without worrying about it going out of temper. This is ideal for the commercial customer but if you are a home hobbyist with enough counter space for this machine then by all means this would be a great asset to have. The chocolate comes out the same as if you were to hand temper but it is way way easier with the machine and you can multitask which make you much more efficient!!
